Ingredients

For the steak:

  • 2 ribeye or sirloin steaks

  • 1 tbsp of coarse salt

  • 1 tbsp of cracked black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1–2 tsp smoked paprika

  • 1 tbsp of vegetable oil

  • Optional: 1 tsp Sichuan pepper powder

In conclusion:

  • 1 tbsp of butter

  • 2 crushed garlic cloves

  • Fresh thyme or rosemary


Instructions

  1. Season both sides of the steak with salt, pepper, paprika, garlic powder, and Sichuan pepper.

  2. Let the steak rest at room temperature for 10–15 minutes.

  3. Heat a cast iron skillet over high heat and add the oil.

  4. Sear the steak for 3–4 minutes per side until you get a golden crust.

  5. Add the butter, garlic, and herbs. Baste the steak with the melted butter.

  6. Remove from heat, let stand for 5 minutes and cut to serve.
